This knife, part of the Pro S series, is made of high-carbon stainless steel and is precision-honed, with a laser-controlled edge, a balanced super-bolster, and a tang that extends to the back of the polypropylene handle that is permanently bonded for seamless accuracy. Use it for chopping, dicing and mincing vegetables, herbs and small cuts of meat. If the larger 8-in. size seems intimidating, this 6-in. knife makes a perfect starter size. I bought quite a few of J A Henckels knives and I love them. 6" is perfect. I noticed that there is a problem with J A Henckel knife lately which is getting me more and more attention. Other consumers have to pay attention, too. I read about the same complaint from other consumers. The spine of the knife is not polished good, therefore, it can cut your finger if you get used to put your index finger on top of the spine to help cutting. I got cut by it again. My first cut was about a year ago. I don't understand why it is not under their quality control and product inspection.
