5Don't Settle (if you can avoid it)

Yes, this is the most expensive piece of stainless steel I have ever purchased. On a pound for pound basis, maybe not. This is three (3) pounds of meat flattening stainless steel. I say again three pounds! My heaviest non cast-iron skillet doesn't weigh as much.I've added resistance exercises to my workout to target my forearms so that I can more accurately wield this efficient "tenderizer." Nothing fails to become the thickness desired. Actually I have to be careful not to pound my chicken cutlets into ground chicken.It's hard to tell from the pictures, but the useable area is about the size of most chicken breasts. One needs only 2-3 strokes to pound out a cutlet to ½ inch or less. One or two more strokes usually gets you to ¼ inch. I am more likely to get uniform thickness throughout the cutlet.I don't wear myself out making sure the plastic wrap (waxed paper will tear after the first stroke; trust me, I know) doesn't shift or the meat doesn't slide around or the wrap hasn't torn from repeated strokes. I don't have a fat end and a thin end of the cutlet. This isn't one and done, but three and done is pretty close.There are less expensive tenderizers out there that are very good. But, the usable surface is smaller and they often weigh less than half of what this weighs. You will achieve the same result, but with many more strokes. You must use much more force on each stroke to get the meat to the desired thickness with the added potential for shreading or tearing the meat.This is not a "must have" tool. But, you will never regret owning it.

It is a maintaince tool that you use everyday. In the case of your knife this would be maintaining the knifes edge. Now eventually you would need to see your dentist. That would be a sharpener. This would be a more detailed and agressive action and they would actually remove metal from the edge of the knife. Much like a dentist would do to your teeth. Now to maintain healthy teeth you brush everyday. To maintain a sharp knife you should steel your knife everyday. And remember only go to the Dentist(sharpener) once or twice a year.

5This steel changed my life.

Initially I didn't understand the steel - and what honing was. Even after I figured it out I didn't see the point until I ran into this incredible steel. Unlike the cheap little ones included with sets, this steel has a big enough diameter, long enough length, and incredible machining on the grooves to really effectively hone every time out. It also has an awesome molded handle and big chunky hanging ring (which you might need because a 12" steel will stick out of most blocks).Why use a steel to hone? Stainless steel is ductile and the edge of a knife is a place where the steel is very very thin. In use the very edge will bend or fold over microscopically. Then, then next cut you make will be on what will be on the fold - rather than on the sharp edge. These micro folds can be straightened out by the use of a Steel - a process called "honing". Honing involves wiping the blade across a hard steel rod which has a large number of tiny parallel grooves cut in it. When the wiping motion is done like carving - at the angle the edge is ground - the steel literally unfolds the edge and gives the fine edge a micro ripple. In this way, steeling a sharp knife that has recently gone dull is like magic - full sharpness is immediately restored. Over time, however, all this cutting and steeling will actually wear metal away from the edge, or some folds will become permanent and the edge itself will become dull and the knife will need to be sharpened."Steeling", or "honing" is emphatically NOT "sharpening". These are two fundamentally different knife care techniques. In short, the steel restores the edge as much as it can, without removing metal; and the sharpening actually removes metal to grind a new edge. Sharpening is done on an abrasive stone or a metal plate onto which diamond or other abrasive has been adhered. Sharpening actually removes metal - so it actually reduces the life of the knife to a certain extent.The big message here is to steel frequently (ideally every single time you use the knife - right before you use it) and to sharpen infrequently (no more than once or twice a year). Chefs are always depicted holding the steel in the air pointing up and flicking the knife rapidly over it. In practice it is almost impossible to properly steel a knife this way. Hold the steel facing down with the tip pressed into your cutting board and cut down, pulling the knife towards you with a slicing motion, with your knife at the grind angle (10-15 degrees for Asian style and 20-25 degrees for Western) while the steel is stabilized rock solid. This way the steel is held rigidly vertical and the angle is easy to see. When you get the angle right you can feel the edge "bite" a little into the steel.Since you should be using the steel frequently, I highly recommend you get the best steel you can. There are some very real differences in the machining of the grooves. You should also be aware that "diamond" or "sharpening" steels are for sharpening, NOT honing. The other big factor in choosing a steel is length. Get a big long one. Theoretically your steel should be 1-2" longer than your longest knife - so a 9" steel ought to be fine if you have an 8" knife. In practice, the longer the steel, the more comfortable and easy it is to steel. I've tried honing an 8" knife with a 9" steel and you have to do two passes to get one stroke. Henkel's 12" steel is a best seller and a great value: J.A. Henckels Twin Pro S 12-Inch Honing Steel. I, personally, went with Wusthof's, which is much more expensive but is utterly exquisite and a dynamite pleasure to use: Wusthof 12 in. Sharpening Steel. Be aware that these big long 12" steels will stick out of most knife blocks. The excellent functionality is well worth the little bit of trouble of it sticking out a bit.FYI - the item reviewed is Wusthof's 4474 - the 12" steel with modern square handle. 4474 is the item being sold here - the photograph was correct until late May 2008, when the photograph of 4471 (a 12" Wusthof steel with an old fashioned beehive handle) was substituted. The 4471 is also excellent - with a virtually identical steel. However I find the handle of 4474 more comfortable. Be aware that the photograph is not of the item on sale. 5Works Great!

I was skeptical of how well this would improve cutting quality between stone sharpenings. Much to my surprise it really made a big difference in how well the my knife cut (Wusthof Classic chef knife). These are supposed to realign the microfine blade edge rather than remove material like a stone would. It will not replace stone sharpening. These are not recommended for the super hard Japanese knives as edge may chip.I really like well made high quality tools like this. The large square metal bolster that is supported at all edges by the handles is a nice touch. This particular steel does have longitudinal ridges. Wuthof sharpening steels are noted for their hardness and longevity. I have yet to had a disappointment with a Wusthof product.I hold the steel with the tip down on a heavy towel and stroke the sharp edge downward. Personally I would never steel with the knife edge toward my body.

5Couldn't use item, returned, seller will refund purchase price

I made a mistake and ordered the wrong item. This sharpener was listed with other similar items that were what I wanted and I didn't notice the description change as I placed the order. I've contacted CutleryAndBeyond and they've agreed to refund the purchase price. Vendor was quite helpful so, for now at least, all's well.I've not yet received the refund. Should there be a problem, I'll add an appropriate follow-up comment.R

4Sharp knife with a delicate blade edge

This knife is of high quality and very sharp. Unfortunately the blade is also delicate and is easily damaged. I think the blade is thinner than European knives because it is only sharpened on one side, and after a couple years of use my blade edge was full of large nicks and dings. After having the edge repaired I now only use it for delicate foods like fruit and sushi. I have found my Henkels chefs knife has held up much better during daily use and is much easier to maintain.

5A trip down memory lane!

I stopped listening to LPs as most folks did when CD players hit the mass market. Convenience was the name of the game, particularly the ease of listening to music on the road. But what a tremendous difference in sound vinyl really provides! I chose the AT-PL120 after several hours of research on the web over a couple of days. I first considered spending the least amount of money and considered the entry-level model AT-PL50. I talked to an audiophile shop and while the shop thought it was a good entry-level model, they advised me to consider the next step up because it was well worth the investment in terms of sound quality and equipment durability. Upon close inspection at a local electronic store, the AT-PL50 looked really cheap. I decided to spend more money and get decent quality. I considered the AT-APL120 and the Music Hall MMF2.1, which has pretty decent reviews. The difference came down to saving $50 or so and decided to try the Audio Tecnica. I must admit, the sound is impressive and the built quality of the turntable is really good. Besides the DJ features, which I really do not care about, it has several bells and whistles that makes it very professional looking. I am using a pair of B&W bookshelf and a Yamaha RX-777, perhaps one of the few available stereos for music listening you can still get. The combination works well, but no doubt the vinyl sounds much better than a well-recorded CD. The AT-PL120 makes the sound really come alive! If you still have your old records and invested in taking good care of them, spend a few bucks and get this turntable. If I ever decide to burn a few LPs to play them in my car, it also has the built in amp. All in all, after two days of playing LPs on this turntable, I am very satisfied. The AT-PL120 comes pretty well boxed too. Too bad that Amazon packed it in a big but soft box, which was open on one side when UPS delivered. If it wasn't for the Audio Tecnica box, I would have refused the shipment. Luckily it all works like it is supposed to.

4Outstanding for the price

I recently purchased the AT-PL120 as a replacement for a very worn Pioneer PL400. Based upon my experience with direct drive turntables, which was very positive, I wanted a direct-drive, and there are few in the AT-PL120's price range. The Audio-Technica machine is not the lowest-priced turntable around, and far from the most expensive I considered, but my recent "test drive" shows it to be as good as advertised if not better. The machine was easy to set-up, it tracks very well, and it does not present any rumble, even running it through my Carver receiver (which tends to show up any problems that a turntable/cartridge might have.) I used two different test records with it, and it performed very well with the tests on both.I now have approximately 40 hours on the new machine with no problems. Many of the functions on the TT will not use by most for home listening -- like reverse, unless you want to check old Beatles LP's to search for "Paul is dead"! -- but having 78 rpm available is a significant benefit to me as I am transcribing some old 78's to CD. I also tried the machine on a slightly warped LP which the Pioneer could not handle, and the AT-PL120 did handle it after I made a slight pitch adjustment.The product was delivered quicker than the delivery schedule promised. As was the case with another reviewer, the outside box that the unit came in showed up after delivery by UPS a little worse for wear. It was poorly taped and was coming open. However the product box was well protected, very strong and well sealed.UPDATE: My original review (above) was done almost two years ago. As of May 2007, I've now spent many hours playing hundreds of LPs on this turntable. It continues to perform well and with no problems. It has maintained all of its settings with little adjustment. I continue to be impressed with the PL120 given its reasonable cost.

I have a decent album collection spanning many genres over many years. After much research online and in audio stores, I purchased a AT PL-120, for burning to MP3 and also just plain listening. I liked the idea of having an internal preamp and also thought that it would be nice for playing 78s. It also came with an excellent cartridge the ATP-2XN.One of the first things that I noticed is that there was no ground wire. I hooked it up and there was a faint hum. This hum was present regardless of where I placed the turntable, wheather or not the preamp was on, or how I connected it to my receiver. I even tried it with 3 different receivers, 2 vintage and a newer one. I called Audio Technica and spoke to someone in customer support (in the USA) that seemed to be very familiar with the item. He took the time to listen to my description of the situation and told me that he had never heard of that problem. While I felt he was sincere and friendly, this did not solve the problem. I figured that maybe I had a bad unit so I returned it to Amazon, ordered a new one and you guessed it, the same damn faint hum. Another problem that I had was that I felt the cue was cheaply designed. I could live with that, but not the hum. Back to Amazon it went.I wound up spending a few dollars more and purchasing the turntable that I should have started off with to begin with - the Technics SL1200 MK2. It does not have the internal preamp or 78 RPM function, but man it is a workhorse and it does just what I need it to do.I liked so much about the AT PL-120 and wanted to love it, but I couldn't deal with what I consider to be a major flaw - the hum.

4I like it, but...

I like this knife, but I'm slightly disappointed. I wish it were slightly sharper (not to say it's _bad_, as it does cut raw chicken breast without tearing, but it didn't shave the hair on my arm). Also, I would like it to feel more substantial: the handle seems almost cheap, and I think I see a little glue holding the blade to the handle. For $100, I'd like it to seem seamless. Nevertheless, it's a nice knife and it does slice well enough, though not as well as I'd like it to. I might look at other sushi knives if I were serious about sushi preparations.

5Cuts bread like butter

I received this knife as a wedding gift and use it quite frequently. My wife and I eat a lot of home-baked bread and find ourselves reaching for the Global every time. This knife makes cutting bread fun. I actually look forward to slicing bread with this knife. A maximum of 2 slices is all it takes to get through bread of any consistency. The Global is unbelievably sharp and, with the signature Global styling, is quite good-looking as well. Every kitchen needs a good bread knife and if you are looking for an knife that will turn the chore of slicing bread into a fun activity, look no further than this knife.

5perfectly designed cooking knives

I bought this set about 2 years ago. I still really enjoy cooking with these knives because they are so well designed. They are very comfortable to hold because of the handle contour and because they are PERFECTLY balanced in your hand. The blades are sharpened with a razor sharp edge that is unlike typical knives. These must not be run through a low-end sharpener, like Chef's Choice or other. To retain the OEM edge, you should have them professionally sharpened or buy a stone. I use all 3 of the knives in this set, but probably use the 8" chef's knife 70% of the time, the serrated knife 20% of the time and the paring knive about 10%. These knives rock!
